This afternoon Savy girl and I made some good ole’ Chicken Divan. I had Brian snap a couple pictures of us in the process and decided to share the recipe on le blog. This is one of those meals that just reminds me of home, my mom used to make it all the time and my kids love it. I’ve been doing the 21 Day fix for awhile now so I left out some chicken and broccoli so that I could stay on the meal plan, but it’s definitely a family favorite and something you guys should keep in your recipe box if you haven’t tried it out yet! Also, don’t judge the photos because I’m definitely not a food photographer haha!
Going back to the 21 Day fix real fast. So many of you have been asking me about my weight loss and how I’ve been doing it! I’ve done a few different things but have really landed on the 21 day fix and found it’s been the one thing I can actually sustain. I’ve been meaning to get my favorite recipes and meal prep routine together but just haven’t had the time to take the photos during the day while it’s light outside! I am putting together a fun fitness challenge on Facebook though, because let’s be honest, it’ll be waaaay more fun to exercise and get in shape for summer with friends (snap family:: those mini-eggs… I need to be held accountable haha!). Here’s the recipe that my mom uses. We’ll make it this way when we have a little extra time and want to be fancy, but we normally replace the sauce with the broccoli cheese soup from costco. So we’ll heat up the soup in a pan over the stove, add the shredded rotisserie chicken (also from Costco) and steamed broccoli. Throw it over rice and done. One pot, barely any prep because the chicken is already cooked and shredded and if you get the broccoli from costco it’s already washed and cut. So…. it’s awesome haha! The recipe below though makes for a prettier dish because you’ve got the stuffing and melted cheese on top. So, you choose which recipe fits your lifestyle! They both taste amazing.
- Rice
- 5 Chicken Breasts
- 2 Heads Broccoli
- 3 cans of Cream of Broccoli and Cheese Soup
- Milk
- Cheese
- Chicken Stove-Top Stuffing
- Start cooking rice, prepare six servings. Steam chicken breasts and cut up. Steam broccoli al dente. Make sauce: mix 3 cans of cream of broccoli and cheese soup with milk until soupy consistency. Spread mixture on bottom of oblong baking dish. Arrange broccoli and cut up chicken on top. Pour the rest of the sauce on top. Sprinkle dry stove top mixed with melted butter on top, add cheese and cover with foil. Bake at 450 for 20 minutes or until cheese is melted and mixture bubbly
- If you're in a hurry, you can heat up the broccoli cheese soup from Costco in a pan and add the shredded rotisserie chicken (also from costco) + broccoli and then just serve over rice.
^^ a few pulses in our blendtec + twister jar and you’ve got yourself some nice baby food. You can puree it all the way but my boys like it a little bit chunkier. Ew… so gross haha!
