Finger lickin’ good!!! Brian and I have really been focusing on our health these last few months – less eating out, meal prepping, more home cooked meals and finding time to work out. We were just stuck for so long in these terrible habits and when the new year hit we decided it was now or never and that being healthy needed to become a priority. I’ve had a pretty awesome journey, I’ve lost 20 pounds, I’m in great shape and I’m finally feel like my old self again. There are a few things I attribute our success to and today I wanna share one of our favorite meals, the Turkey Lettuce Cups from Debi Mazar, chat about meal prepping and talk about my recipe experience with OK Soy Vay!
These Turkey Lettuce Cups ARE SOOO GOOD!!!!!! Brian and I love them because they literally take 15 minutes to make, they’re incredibly healthy and they are awesome leftovers which means they’re great for meal prepping. We like to to make a whole bunch and then we divide the turkey mixture into baggies so that they’re easy to assemble and already portioned out for our lunches. I’ve just learned that when it comes to eating healthy, if it takes longer than 2 minutes to make, I won’t do it. I’ll end up starving myself all day — not on purpose but just because I don’t have the time to cook anything because I’m so busy taking care of everyone else — and then dinner time comes and I’m so hungry I just want to eat aaalll the food and we end up going out and I regret everything! Does that sound familiar?! Meal prepping is where it’s at! Spend an hour or two one night a week and do all your chopping, make a few meals that reheat well like these turkey wraps and give yourself a way to succeed!
Okay, onto the coolest invention ever invented — a mom’s DREAM! You guys are going to love this! OK Soy Vay has 100’s of voice activated talking recipes and it makes cooking so much easier! You choose what recipe you want to make and then you tell it what you want to do and it talks back. Totally guides you through every step from the prep to the cooking to the plate so you can keep your hands free and your computer clean. Finished chopping the mushrooms? Okay what’s next? I don’t even have to lift my eyes to the screen or find where I am in my recipe, it just starts telling me! I know, right?!
Another way cool thing which has come in handy so many times is that I can start a recipe and then if I need to leave the kitchen for something, Brian can step in and take over the next steps. He knows exactly where I am, what I’ve done and what he needs to do to keep the meal going. It’s genius you guys, GENIUS!
