Welcome my friend Dani, from the Dani Marie blog, back! She’s sharing another great life hack today with some easy dinners you can always have on hand. I am loving all these great tips she’s been sharing and I hope you are too. Make sure to check out her other posts if you haven’t. Now, let’s get to Dani!
It is back to school time, the time when routines are put back into place and life gets a little bit more structured, well at least at our house. It also is the time where a lot of extra curricular activities start. My little boy has started soccer and has soccer practice twice a week when Zach gets off work. Dinner time is always a time that is a little bit hectic at our house and especially with extra curricular activities added in there. Then you add homework and witching hours into that and to say it is crazy town would be an understatement.
Easy Dinners For The Win
We always have 3 meals that we keep everything stocked in the pantry for when those crazy nights come. These meals are quick and easy to make and they are meals that my entire family loves. I hope that you guys love them, try them, and that they make your dinner time a little bit easier!
TACO SOUP (really more like taco casserole)
1 Can Black Beans – Rinsed & Drained
1 Can Pinto Beans
1 Can Corn
1 Can Diced Tomatoes
1 Packet Taco Seasoning
1 lb Ground Beef
This is really thick and we joke that it is more like taco casserole than soup. If you want it more of a soup consistency you can add tomato juice and a can of water to it. Brown Ground Beef with Taco Seasoning. Add all other ingredients to a pot and heat, add ground beef & serve with chips!
WHITE CHICKEN CHILI
1 lb Cooked Shredded Chicken
1 Can Northern White Beans
32 oz Chicken Stock
1 White Onion
1 TBSP Minced Garlic
7 oz (1 Can) Green Chilis
2 tsp cumin
2 tsp oregano
1/2 tsp cayenne
Cook & Shred Chicken or use Rotisserie Chicken, set aside. Sauté onion in soup pot, once translucent add in minced garlic, green chilis, cumin, oregano, cayenne, and chicken stock. Heat through then add chicken. Serve with tortilla chips, garnish with cilantro and sour cream if desired.
This Easy Dinner Only Needs Three Ingredients to Make
SALSA CHICKEN
1 packet taco seasoning
2-4 large chicken breasts
1 jar salsa
Put all ingredients in crockpot, cook on low for 6-8 hours. Serve as chicken tacos, enchiladas, on nachos, etc.!
I would love to know what simple recipes your family loves and what you always keep things on hand for easy dinners at your house!
